Peppercorn Steak (low carb recipe)

1 lean sirloin steak (medium) 1 tsp olive oil peppercorns Worcester sauce soy sauce baby carrots

Heat the pan high, remove fat from the steak then coat sirloin in olive oil, peppercorns and Worcester sauce then fry it on a non stick pan, let it sear well on 1 side before turning, cook to desired (rare to well) put the carrots in a microwave bowl with tbsp soy sauce and cook in microwave for 3mins, serve altogether and enjoy. Peppered Sauce

200 ml Beef Stock 1/2 a beef stock cube dissolved in boiling water 2 tbsp Quark 1/2  onion chopped very finely 3  Mushrooms chopped very finely 1 tsp Freshly Ground Black Pepper 3/4 tsp Xanthan Gum Frylight



Mist a large frying pan with frylight and heat up. Throw in the onions and mushrooms cook until browned Add the pepper & Worcestershire sauce and cook for a further minute Add the stock to the pan and cook for a further 3 minutes Remove the pan from the heat and add the quark, keep stirring until it's been incorporated Place 200ml of the sauce into a jug and and whisk in the xanthan gum a 1/4 of a tsp at a time. You will need to whisk well - and keep whisking! Return the thickened sauce to the pan and stir will - it will thicken the sauce. Gradually higher the heat, making sure to stir the sauce till it's bubbling. Taste, check the seasoning. Add more salt and pepper to taste then serve!
